Juicy Chocolate Cake

For the cake:

  • 250 g sugar
  • 250 g softened butter
  • 3 medium eggs
  • 80 g cocoa powder
  • 80 ml water
  • 1 tsp baking powder
  • 200 g flour
  • 2 medium apples, finely grated
  • For the glaze:
  • 150 g icing sugar
  • 1 tbsp cocoa powder
  • 1 tbsp butter
  • 1 tbsp milk
  • For decoaration:
  • 8 scoop(s) vanilla sice cream
  • 6 sprig(s) mint
  • 150 g whipping cream
  • 8 large strawberries, sliced
  • chocolate sauce
  • icing sugar

 Juicy Chocolate Cake

Sift the flour with the baking powder into a mixing bowl. Add sugar, butter, eggs, cocoa powder, water and the grated apples. Knead until well combined. Fill the batter into a buttered loaf tin. Bake in the preheated oven at 160°C for 1 hour. Allow to cool.In a bowl mix the icing sugar with cocoa powder, butter and the milk. Heat the glaze over a water bath and stir until smooth. If too firm, add more milk. Brush the cake with the glaze and allow to dry.

Cut the cake into slices and arrange on plates. Whip the cream until stiff. Garnish each slice of cake with a scoop of ice cream, a dollop of whipped cream, some strawberry slices and a mint sprig. Drizzle with the chocolate sauce and dust with icing sugar
