Spiced Apple Cake


Makes : 1 cake

  • For the Cake
  • 125g plain flour
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons sugar
  • 60g butter
  • 4 tablespoons milk
  • 1 egg, well beaten
  • 1 pinch salt
  • For the Topping
  • 2 small green apples, peeled and sliced
  • 3 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon melted butter
  • For the Glaze
  • 4 tablespoons apricot jam
  • 1 tablespoon hot water

Directions to make the Spiced Apple Cake

  • Preheat oven to 180 C / Gas 4.
  • For the cake: Sieve flour, baking powder, salt and sugar into a bowl. Rub butter in until the mixture resembles fine breadcrumbs. Stir in egg and milk. Spread mixture into a well greased pie dish.
  • For the Topping: Arrange sliced apples in a circular pattern to cover cake completely. Mix together sugar, cinnamon and nutmeg, sprinkle over apples. Drizzle with melted butter.
  • Bake in preheated oven for about 30 minutes.
  • Meanwhile, make the glaze by mixing together apricot jam and water until smooth. Pass through a sieve and set aside.
  • Once the cake is cooked, drizzle over glaze.
