
Ingredients
Makes : 1 cake
- For the Cake
- 125g plain flour
- 1 1/2 teaspoons baking powder
- 3 tablespoons sugar
- 60g butter
- 4 tablespoons milk
- 1 egg, well beaten
- 1 pinch salt
- For the Topping
- 2 small green apples, peeled and sliced
- 3 tablespoons sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon melted butter
- For the Glaze
- 4 tablespoons apricot jam
- 1 tablespoon hot water
Directions to make the Spiced Apple Cake
- Preheat oven to 180 C / Gas 4.
- For the cake: Sieve flour, baking powder, salt and sugar into a bowl. Rub butter in until the mixture resembles fine breadcrumbs. Stir in egg and milk. Spread mixture into a well greased pie dish.
- For the Topping: Arrange sliced apples in a circular pattern to cover cake completely. Mix together sugar, cinnamon and nutmeg, sprinkle over apples. Drizzle with melted butter.
- Bake in preheated oven for about 30 minutes.
- Meanwhile, make the glaze by mixing together apricot jam and water until smooth. Pass through a sieve and set aside.
- Once the cake is cooked, drizzle over glaze.
